Story

 The State of Michigan desired an energy efficient consolidated Food Service facility that would meet the standards of USGBC LEED Certified Level. In the facility, the SOM Department of Corrections will be able to prepare up to 9,100 meals daily to populations housed at the various       individual facilities in or near the existing Huron Valley complex.  The new food service building will  accommodate, as a minimum, the   following inmate populations:

  • 900 meals (2,700 daily) served at an on-site cafeteria;
  • 840 meals (2,520 daily) shipped in hot or cold bulk form and shipped to twofacilities for off-site service;
  • 385 meals (1,155 daily) chilled in bulk form, chill-portioned to trays, and shipped to the Forensic and Community Mental Health for off-site re-thermalizing and service.

The dining area is designed to accommodate a minimum seating capacity of 250 to allow for 20 minute feeding cycles. Functional areas consist of full food production, bakery production, quick chill tray    make-up, food preparation rooms, dry food storage, two day chilled tray storage, two day full tray cart        refrigerated storage, diet/religious meal preparation, freezers, coolers, dish washing, dining, food    serving lines, administration offices, third shift officer food prep, officer podium, material/supply      storage,     equipment storage, clean and dirty cart storage, cart staging, loading dock and screen    entrances.
